4-day Immersion in Quebec City

Note: This immersion experience has very few requirements beyond the French language. The participants must be fit enough to allow them to walk about 3 hours each morning, at a slower than average pace, and 3 hours in the afternoon, at the same pace. Please note that the immersion experiences are active, in the sense that we won't be sitting the whole day, or renting a car in order to go from place to place. 

Québec City — The City That Hides in Plain Sight

The most useful thing to know about Québec City is the meaning of its name. Québec comes from an Algonquin word, kébec, meaning roughly "where the river narrows." Stand on the heights of the old city and you can see why the word stuck: the St. Lawrence, broad and open for much of its course, pinches here to a little over a kilometre, squeezed between the cliffs.
Whoever held this point held the river, and with it the whole interior of the continent. That is why a fort was built here, and why a city grew around the fort. But notice what the name itself is doing. It is not French. It is older than France's presence on this land, drawn from the languages of the peoples who lived here long before any wall was raised — among them the Innu and the Huron-Wendat. 
So the city begins by doing the very thing this talk is about. On its first word, it is already hiding an older layer beneath the one we see.

That is the idea worth carrying through everything that follows. Québec City is the most photographed city in Canada, and almost everything genuinely interesting about it sits just out of frame. It is a page that has been written on, erased, and written on again. Most of what follows takes place inside the old walls, in the historic city of the postcard; near the end, deliberately, we will step outside them, because that is where the city actually lives and breathes today. The method stays the same throughout: look at the surface, then look at what the surface conceals.

Je me souviens

Let’s also begin with a question the city poses to everyone who drives through it. On every Québec licence plate are three words: Je me souviens — "I remember." The motto was carved beneath the provincial coat of arms by the architect Eugène-Étienne Taché, traceable to 1883, made official in 1939, and placed on licence plates in 1978 in place of the older slogan "La belle province." 

What is striking is that no one ever fixed its meaning. The exact sense of the phrase has been argued over ever since, with interpretations that all relate, in one way or another, to the history of the Québec people. A city whose official statement is "I remember," and which then refuses to say exactly what it remembers, is a city worth reading slowly. Everything that follows is, in a sense, an attempt to answer that open question.

Why this immersion is different:

This immersion is also about human connection. You’ll spend four days with a small group of motivated learners who share your curiosity and commitment. Conversations deepen naturally when you walk, eat, and explore together. Many participants leave not only with stronger French but with meaningful new friendships.

4-Day French Immersion — Québec City

The week is built to build you up, then let you land softly. And throughout, on every day, from the first coffee to the last goodbye, we live and speak entirely in French. The dial below shows how demanding the French is on each day, never whether it is present, because it always is.

Sunday September 6 — Arrival and early options for those already in town

I arrive late on Sunday, so we won't gather officially, but for anyone in Québec early there are two wonderful ways to begin, both entirely optional:
  • An Old Québec food tasting tour, noon to 3 pm, ten authentic local tastings across the old city (around $122 CAD, limited places).

  • A half-day visit to Wendake, the Huron-Wendat site just north of the city, where you can step into the history, traditions, and language of one of the founding peoples of this land. For many, especially our American friends, this is an unforgettable first taste of the trip.

* The above two options run at similar times, so plan on one or the other rather than both. Otherwise, make your way into the city at your own pace, settle in, and rest. Our week truly begins together on Monday morning.

7:00 to 9:00 pm An entirely optional dinner for anyone already in town, an informal get-together before the week officially begins. Just a relaxed table for those who feel like company, a first chance to meet a few faces and warm up your French over a good meal. The exact location will be communicated as we get closer to the immersion.

Day 1, Monday September 7 — Dive In

9:00 to 10:00 am We meet for coffee and breakfast at La Maison Smith, in French from the first word, to set the tone for the week, talk about Québec City, and get to know one another. This is where notebooks make their first appearance.

10:00 am to 12:15 pm We walk to the Château Frontenac for a visit of its interior, step out onto the great sweep of Dufferin Terrace, then descend beneath it to the Saint-Louis Forts and Châteaux, the underground site holding the remains of the former seat of power of the French and British governors. More than two hundred years of history lie under our feet.

12:30 to 2:30 pm Our first shared lunch as a group. (venue to be confirmed)

3:00 to 5:00 pm Le Grand Marché food-buying challenge, the speaking centerpiece of the morning. We turn you loose among the stalls with a real task: to stock up, in French, on local and unique food to keep at your lodging for the week. It means speaking French with real vendors from the very first day, and it has a practical payoff too, a fridge full of Québec specialties so you can eat in when you like and spend less on restaurants. Nothing breaks the ice with a language faster than having to use it to do your shopping.

6:00 pm to 8:00 pm An optional pub gathering, an easy low-cost way to close the day for those who'd rather not spend much. Show up between 6 and 8. Eat and drink as much or as little as you like. From there the evening is yours.

Day 2, Tuesday September 8 — History and the Working City

7:30 to 7:50 am Short optional coffee at Le Manoir Victoria, a quiet warm-up before a demanding French morning. Otherwise, have your first coffee wherever you like and meet us at the hotel for 8 am.

8:00 am to 12:00 pm Our morning with Xavier Chambolle, founder and CEO of Tours Accolade, the finest guide in Québec City: his full conference on the history of the city, entirely in French with a question period, followed by his guided walking tour of the streets. This is the most demanding session of the week, so if you sit at the lower end of the range, let the flow carry you and don't worry about catching every word. Xavier is the contribution that took our June immersion from good to excellent.

12:30 to 2:30 pm Lunch in a typical Québécois restaurant. (venue to be confirmed)

3:00 pm onwards The afternoon splits in two, each led by a staff member, so you can follow your own interest:
  • One group visits the Musée du Monastère des Augustines, on Rue des Remparts, where 350 years of history unfold around the first missionary and nursing women in North America, a remarkable site holding more than 50,000 medical and spiritual artefacts.
  • The other goes shopping for gifts and souvenirs, an easy, talkative afternoon of browsing the city's shops and markets, French very much encouraged with every shopkeeper.And of course, taking the afternoon off to rest or wander on your own is just as respectable.


6:00 pm onwards We gather in the Saint-Roch district in the Lower Town, young, trendy, and dynamic, where a working-class history meets a modern urban culture and the city's culinary scene comes alive. We share a casual dinner together, then take an easy evening walk through the neighbourhood and finish with an ice cream, because we should. The whole evening is optional: join us, or strike out on your own.

Day 3, Wednesday September 9 — Art, Conversation, and a Quieter Afternoon

9:00 to 10:00 am We meet for coffee and breakfast at La Maison Smith, in French, reviewing the previous day, opening our notebooks, and keeping the conversation going.

10:00 am to 11:00 pm A visit to one local art gallery, looking closely at work by Québec artists and talking about what we see, all in French. 

11:00 to 12:30 pm Lunch together. (earlier lunch, venue to be confirmed)

1:00 to 3:00 pm A private visit to Martino, a family leather house that has been making footwear in Québec City since 1956. Known for its handmade moccasins and its winter boots, Martino still crafts everything by hand in its Québec workshop, blending old shoemaking methods with modern technique, and today ships its work as far as Japan and Europe. The team welcomes us to share their story and their savoir-faire, so you see up close how a single pair comes together and hear the craft described, in French, by the people who live it. A rare look at a living Québécois trade, and a natural source of words you will not find in any lesson. 

3:30 pm to 5:00 pm We settle in for 90 minutes of conversation, entirely in French. No agenda, no pressure, just the group talking together over a coffee or a cold drink: what you've seen, what surprised you, the words you've picked up along the way. After two days of mostly listening to guides and museums, this is your time to do the talking, and it is the kind of relaxed, real exchange that does more for your French than any lesson.

5:30 to 7:00 pm Free time. Either join others for a simple dinner or walk around the city or rest a bit. 

7:00 to 10:30 pm An optional evening cruise on the Saint Lawrence: The city from the water at night is worth staying up for. If you join us, eat dinner beforehand with other participants or on your own, or use the time to nap and recover. If you'd rather not, the evening is free.

Day 4, Thursday September 10 — Recap, the Parliament, and a Last Dinner Together

A warm recap, a fitting civic finale, and a long farewell dinner to close the week well.

9:00 to 10:30 am Recap breakfast at La Maison Smith, in French, given over to the week itself. What did you like best, what challenged you, what surprised you. We compare notes and share our photographs, each person showing their four images and saying a few words about each. You need to be dressed in smart casual (no t-shirts, no shorts, no beach wear) for lunch at the Parliement’s restaurant right after. 

11:20 to 2:00 pm Lunch at Le Parlementaire, inside the Hôtel du Parlement.

2:30 to 4:30 pm Our guided tour in French of the Hôtel du Parlement, the seat of Québec's National Assembly.

4:30 to 6:00 pm A short breather to freshen up before the evening.

6:30 to 9:30 pm Our farewell dinner at BeClub, a cool and intimate spot. We talk over the whole week, eat well, laugh a lot, and say our goodbyes. The right way to close four days together.

Home base and the evenings

Our gathering point on Monday, Wednesday, and Thursday mornings is the same welcoming spot, central and easy to find:

Ample seating, good coffee, and many breakfast options. You are under no obligation to eat or order anything at all. The only thing we ask is that you show up, ready for the day.
(On Tuesday we meet instead at Le Manoir Victoria, for an optional coffee at 7:30 or the start of the day at 8 am.)

As for the evenings, they are yours to shape. Every evening activity is completely optional except Thursday: the Monday pub, the Tuesday gathering in Saint-Roch, the Wednesday cruise. Come along if the mood is right, or slip away for a quiet night. Either choice is equally respectable, and nobody keeps score.

The one evening we hope you'll hold onto is Thursday, our recap and farewell dinner, where we talk over the whole week, eat well, laugh a great deal, and say our goodbyes properly.

Practical Details

  • My role: French language coach, cultural guide, and translator — available 8 hours/day (8:00 am–6:00 pm).
  • Meals: Daily group lunch. All meals, including these lunches, are at your own expense and not included in the immersion fee. Breakfast and dinner are optional and at your discretion.
  • Accommodation: Participants arrange their own lodging.
  • Arrival/Departure: Please plan to arrive at least one day before program start day.
  • Not included: Flights, lodging, all meals, airport transfers, visas, and personal expenses.

Thanks again Francois and Amy and Joan too! It was a lot to pull off but was a great experience. To me it was a good combination of the French immersion along with the experience of a beautiful city (maybe the most beautiful in Canada). Meeting great people (all!) was the bonus that I was not counting on. For me it was a good mix of the language, the city, the cuisine, and the physical. It is hard to pick out one place that was a favourite. The Terrasse itself is very special with its size, the Chateau Frontenac, and the river (fleuve)! I went for a couple of late walks on it and also did one yesterday morning before leaving. I also visited a couple of the small towns nearby which were a different look at a more rural Quebec. Well done Francois and I could see you doing a couple of different versions of this same trip. People will love it!
